i’ve been making this for lunch several times a week, so i thought i would share how i make it. it takes me about 5 minutes to put together, so this is perfect for when you don’t have that much time. it’s a pretty light lunch, so you could add some toast or pasta, which would hold you over until dinner time.
- INGREDIENTS:
- - albacore wild tuna or tonnino
- - tomato
- - flat parsley
- - juice of a lemon (to taste)
- - salt & pepper
- - organic mayonnaise
- - vidalia onion
- METHOD:
- start by taking a bowl and add your tuna, some organic mayonnaise, about 2 tablespoons and juice of 1/2 a lemon and mix this all together and this is your base. from here, you can add any veggies of your choice (cucumber, celery, bell pepper). i usually keep it simple with chopped tomatoes, onions and parsley. top it off by adding your salt & pepper.
