i haven’t perfected my omelet making technique yet but this method always turns out perfect every single time. you can make this frittata with any combination of veggies that you have in your fridge and it’ll be delicious.
- INGREDIENTS:
- - 1 small onion
- - handful of mushrooms
- - 1/2 red bell pepper
- - cherry tomatoes, halved
- - a bunch of spinach
- - 6 eggs
- - 2 tbsp olive oil
- - sea salt & pepper to taste
- METHOD:
- chop one onion and bell pepper and slice cremini mushrooms. then, in a bowl, whisk together the eggs, sea salt & black pepper. set your oven to broil or grill to 350 degrees Fahrenheit. meanwhile, add 2 tablespoons of olive oil to your oven safe pan. sauté onions then add all other ingredients (mushrooms, bell peppers, tomatoes and spinach). pour in the egg mixture and let it continue to cook for about 1 minute. this is all done on medium to low heat. lastly, place the pan into the oven and broil for 6 minutes or less or until brown.
- NOTES:
- if possible, try to use a cast iron skillet because it's non-stick naturally, which is healthier for you and your family. you can top off the frittata with microgreens too.
