beautiful red onions macerated in white vinegar. a bit of salt, a bit of sugar and some water. it’s delicious with a salad, in a sandwich and on a taco. they add so much oomph to many dishes. learning how to make pickled red onions is so easy and only take minutes to make.
- INGREDIENTS:
- - red onions
- - 1 cup organic distilled white vinegar
- - 1 cup water
- *the measurement of the vinegar and water will be based on having enough liquid to cover the onions
- - 1 ½ tsp sea salt
- - 1 tbsp sugar
- METHOD:
- slice red onions thinly and place them in a jar. measure equal parts water to vinegar and pour into a sauce pan. add sugar (based on how sweet or tart you prefer them) and salt and bring to a simmer until sugar and salt dissolve. pour it into the jar with the onions and let it cool down. put a lid on and refrigerate. it will turn more pink each day as the flavors marry together. good for 2 weeks for peak freshness.
