i would say about 80% of the recipes posted are pretty healthy. so, 20% of recipes will be foods i enjoy from time to time. this will mean some of the ingredients may not be super clean. now, that that’s out of the way, these are the perfect pancakes to enjoy on a slow Sunday morning.
- INGREDIENTS:
- 2 cups all-purpose flour (it's important to level your flour for this pancake recipe)
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 1/2 tbsp granuated sugar
- 2 cups Kate's buttermilk
- 3 eggs
- 1 tsp vanilla extract
- Nestle Toll House semi-sweet chocolate mini chocolate chips
- butter to cook the pancakes in
- maple syrup
- METHOD:
- whisk flour, baking powder, baking soda, salt and granulated sugar in one bowl. in another bowl, add the eggs, buttermilk and vanilla extra and whisk lightly. make a well in the middle with your dry ingredients and add your wet ingredients in. slowly whisk everything together. please don't overmix, little lumps are totally fine. let your batter sit while you preheat your griddle to 400 degrees. add a little butter to your griddle. them, using a 1/4 measuring cup pour the batter on the griddle. wait for the pancakes to bubble. this should take 2-3 minutes when it's a golden brown color. while you wait for the pancakes to bubble, add your mini chocolate chips. lastly, flip (the hardest part) and cook the other side for another 2-3 minutes.
- NOTES:
- i feel like the key to these perfect pancakes are Kate's farm fresh buttermilk. it's pure buttermilk made the old-fashioned way with zero additives and fillers. the second key, is cuisinart deluxe griddle, which i'll link below.
