this is my favorite breakfast lately. i promise once you try this you will love it. it’s warm, hearty and delicious and feels like you’re eating dessert. this is seriously so easy. i guess the only thing that takes a bit of time is cutting up the fruits. if you don’t have much time in the morning to prepare this, you could prepare the base at night. it will just be a little cold in the morning. you can skip any step and make it with whatever you have on hand.
- INGREDIENTS:
- - chia seeds
- - boiling water
- - 1 or 2 dates (i cut these in half to make it easier to mash)
- - yogurt
- - almond butter
- - banana
- - apple
- - strawberries
- - granola
- - cinnamon
- METHOD:
- add a generous amount of chia seeds to your bowl. then i add boiling hot water, at first it will feel like a lot of water but within a few minutes, the chia seeds will expand. add a date or 2 and smush it with a fork. this gives a little sweetness. add your yogurt, which has good probiotics and then mix that up. add about 1 tablespoon of almond butter and your base is done! now, add all of your toppings. whatever fruit you like. i find that strawberries, bananas, apples and mangos go really well with this. i didn't add granola to mine but you defintely can for some crunch and healthy fats. i top it off with cinnamon in the end and it pairs so well with the apples.
