let’s make one of the best, healthy snacks around. rice cake thins with avocado, tomatoes, and red onion. add your favorite toppings and it’ll be your go-to snack. i like to top with high quality salt, like Maldon. the pyramid-like flakes of Maldon salt take something simple like avocado into new territory.

- INGREDIENTS:
- 2 Lundberg rice cake thins
- 1/2 avocado
- 1/2 lemon
- 1/2 tomato
- 1/4 red onion
- 1 oz goat cheese
- 1 tsp olive oil
- 1/8 teaspoon Maldon sea salt flakes
- 1/8 pepper
- 1/8 chili flakes
- METHOD:
- first, cut avocado (squeeze some lemon juice on top) tomato and red onion into thin slices then spread over the rice cake thins. add the crumbled goat cheese. drizzle with just a touch of olive oil on top. season lightly with salt and pepper, and chili flakes.

how to pick a great avocado: check under the stem! peel it back and if you find that it’s green underneath then it’s ripe and ready. take that avocado home with you.
- how to easily cut your avocado: take your knife and cut lengthwise around the avocado. twist the halves to pull them apart. to remove the pit, place the avocado in a kitchen towel. then, give the pit a tap with a knife and twist. you can smooth the avocado with your finger and make it prettier. use a big spoon to scoop out the avocado then flip it over and smooth it over again. cut it into slices.
